Sabudana Usal

This is one of my favorite Maharashtrian snacks (not that we have too many!!) which was originally supposed to be had during fasts only. It’s very easy to make & doesn’t demand very many ingredients either. Some people call it sabudana khichdi; anything is fine as long as it tastes the same.

Ingredients

1 cup sabudana
¼ cup roasted peanuts
3 tbsp yogurt
2-3 chopped green chillies
2 tbsp ghee
Salt for taste

Method

- Wash sabudana with some water & let the sabudana soak in maybe ½ cup water for about 2
hrs. Make sure you don’t soak it in too much water as it may become very soggy.
- Dry roast the peanuts until they turn golden brown. Crush them in a food processor so that
they are not whole but not exactly powdered.
- Once the sabudana is ready, mix the ground peanuts, yogurt & salt properly with the
sabudana.
- Heat a pan & add ghee to it. Add some jeera seeds & once the jeera tempers, add chopped
chillies to this ghee. Add the sabudana mix to this heated ghee & mix it properly. Let it cook
for 4-5 minutes & usal is ready to be served. It tastes best when served hot. You can garnish it
with coriander if you wish.
