Zucchini bread

We have our own farmers market on our street is what P thinks! Us neighbours always exchange the fresh produce we have from our tiny veggie gardens; nevertheless it gives us immense joy & pride to enjoy our very own organic veggies/fruits. So I got one such huge zucchini, yes it was probably taller than Subir :) I am not a big fan of grilled zucchini & hence thought of baking some zucchini bread. I followed this recipe, http://allrecipes.com/Recipe/Zucchini-Bread-IV/Detail.aspx
Only change i made is added some honey. The bread turned out perfect, even lil subir enjoyed it!

Sabudana Wada by Pinky

I have always been a big fan of the "Upavas food" as they say in marathi. Its supposed to be healthy & easy to make. This is a subudana wada recipe from Pinky (my friend & also my friend Raghav's wife). These patties are really easy to make & have been an all time favorite finger food of all the kids that I have known.

Ingredients

Sabudana - 1 cup
Boiled Potato - 2
Roasted Peanuts - 1/2 cup
Finely chopped Green chilles
Finely chopped Coriander
Kaddi patta
Salt to taste
Red chilli powder (optional)
Dry Mango powder
Cumin powder

Method
  1. Soak Sabudana in water for 3 - 4 hours. Put less water and do not keep them soaked for too long.
  2. Grind the roasted peanuts.
  3. Mix mashed potatoes, sabudana, grinded peanuts, green chilles, coriander, kaddi patta, dry mango powder, salt, cumin powder, and red chilli powder.
  4. Make flattened roundles.
  5. Heat oil in a pan and deep fry till they turn golden brown and crispy.
Serve hot with sweetened yoghurt or your favourite chutney.

Sabudana Usal

This is one of my favorite Maharashtrian snacks (not that we have too many!!) which was originally supposed to be had during fasts only. It’s very easy to make & doesn’t demand very many ingredients either. Some people call it sabudana khichdi; anything is fine as long as it tastes the same.

Ingredients

1 cup sabudana
¼ cup roasted peanuts
3 tbsp yogurt
2-3 chopped green chillies
2 tbsp ghee
Salt for taste

Method

- Wash sabudana with some water & let the sabudana soak in maybe ½ cup water for about 2
hrs. Make sure you don’t soak it in too much water as it may become very soggy.
- Dry roast the peanuts until they turn golden brown. Crush them in a food processor so that
they are not whole but not exactly powdered.
- Once the sabudana is ready, mix the ground peanuts, yogurt & salt properly with the
sabudana.
- Heat a pan & add ghee to it. Add some jeera seeds & once the jeera tempers, add chopped
chillies to this ghee. Add the sabudana mix to this heated ghee & mix it properly. Let it cook
for 4-5 minutes & usal is ready to be served. It tastes best when served hot. You can garnish it
with coriander if you wish.
